Extraction is the part of beekeeping that new beekeepers tend to over-invest in before they need to, and under-invest in when they actually do. A two-frame manual extractor handles the output of a ten-hive apiary comfortably if you are harvesting twice a year. This guide covers the equipment and process for a small operation, with notes on where to spend and where to save.
Uncapping ¶
Uncapping is the step that most affects extraction efficiency. A cold uncapping knife (kept in cold water between frames) works well for small batches. A heated electric knife is faster and produces a cleaner cut, but it costs more and requires a power source. For a ten-hive apiary, a cold knife and an uncapping fork for the low spots in the comb is sufficient. An uncapping tray with a mesh insert catches the wax cappings and lets the honey drain back rather than being wasted.
Extraction ¶
A two-frame radial extractor handles standard Langstroth frames and can process a full super of ten frames in approximately 45 minutes with two people working. Spin slowly for the first 30 seconds to avoid breaking the comb, then increase speed. Reverse the frames after the first spin to extract both sides evenly. Stainless steel is the only material worth considering for the drum. Plastic extractors are cheaper but harder to clean and shorter-lived.
Settling and filtering ¶
Raw honey from the extractor contains wax particles, air bubbles, and occasional bee parts. A settling tank with a coarse filter at the inlet and a fine filter at the outlet removes most of this. Allow the honey to settle for at least 24 hours at room temperature before bottling. In cooler months, warming the settling tank to 35°C speeds the process without damaging the honey's enzymes or aroma. Do not heat above 40°C.
Bottling ¶
A gate valve at the base of the settling tank makes bottling straightforward. The valve diameter matters: a 2.5 cm gate valve passes crystallised honey without blockage, which is relevant in the cooler months of June and July in the South and Southeast. Glass jars are the standard for retail sale. If you are selling at a farmers market or direct to consumers, 250 g and 500 g jars are the most practical sizes.
Cleaning ¶
Clean all equipment immediately after use. Honey left in an extractor or settling tank will crystallise and become very difficult to remove. Warm water (not hot) dissolves honey residue without damaging stainless steel. Avoid detergents with strong fragrances, which can leave residues that affect the flavour of the next batch. A final rinse with clean water and air drying is sufficient.
